    又是秋高气爽时

    “蟹螯即金液,糟丘是蓬莱。且须饮美酒,乘月醉高台”。又是秋高气爽时,吃大闸蟹、水果、月饼、骑马、击剑、放风筝、游山玩水...(当然还有考MBA不能忘)。用最近流行的师洋的经典台词就是:“对了,对了,大家给我Happy起来。”
     不知道从什么时候开始,每年吃大闸蟹成为了一年又过去的标志。今年我还没吃过蟹,今年的“处女蟹”当然一定要挑好的了。买蟹买多了就有一套经验方法:看蟹壳壳贝色泽鲜明,有光泽,且呈墨绿色的,一般都体厚坚实;呈黄色的,大多较瘦弱;能挑选到“金毛金爪”的更好。看肚脐肚脐突出来的,一般都脂肥膏满:凹进去的,大多是“瘦肉型”。当用手拿蟹时还要觉得够“重”,这才挑到肥美多膏,蟹肉丰满的大闸蟹。看蟹足足爪结实,蟹足上的“脚毛”丛生,一般都膘足老健;无毛的,大多是体软无膘。俗话说:“农历八月挑雌蟹,九月过后选雄蟹”。因为农历九月过后雄蟹性腺成熟好,滋味营养最佳。看活力将蟹翻转身来,能迅速用蟹足弹转翻回的,说明活力强;不能翻回的,活力差,存放的时间不能长。也可通过其“横行”来观察,爬行时肚腹离地者就是好货。当然,其蟹足均被绑住,那就不在此列了。不过,还可看蟹是否反应灵敏,若用手或枝条触动其眼睛旁边时,眼珠子会灵活闪动,反应敏捷,或者“口喷白沫”者,还是够生猛和新鲜的。
